Although yesterday was “Meatless Monday,” I still want to share this great vegetarian recipe for Spring Spirit Polenta, posted by Sarah Britton of “My New Roots” blog. Click on the picture for a recipe. Ingredients include polenta, light vegetable broth, onions, asparagus, wild leeks, green peas, coconut oil, Pecorino Romano, olive oil, lemon, and sea salt.
