I (my dad) bought a mandolin slicer from target to make zucchini noodles. I decided to try making noodles with this slicer before shelling out for a spiralizer. It’s a little difficult to use at the beginning, but I got the hang of it. Some tips would be to cut the zucchini into a rectangle before slicing and then cut the slices lengthwise to get the linguine shape.
For my pasta, I cut up 2 cloves of garlic and sautéed it with about 2 teaspoons of olive oil. Then I added half a tomato and 2 cups of spinach. When that was all cooked down I added the zucchini and mixed it all together. For some flavor, I would recommend adding some parmesan on top of the pasta.
This is a great way to get vegetables! This dish has 3.5 servings of vegetables, which is just over the daily recommendation.
